This was a HUGE hit in our house tonight! It’s was fast and easy (minus the shredding part, but I enlisted the hubby’s help for that and it went faster). The boys gobbled it up, hubby loved it and everyone asked for more! I used store bought ingredients to make it even easier!
CROCKPOT CHICKEN TACOS (with Avocado Cilantro Lime Dressing)
4 organic chicken breasts
2/3 cup organic chicken broth
1 cup salsa of your choice
2 cups frozen corn
2/3 cup Taco Seasoning (we used the McCormick brand one we got at Costco)
2 cubes cilantro base cubes (Knorr brand)
fresh tomatoes (to top)
fresh cilantro (to top)
squeeze of lime
avocado cilantro lime dressing to taste
homemade gluten free tortillas
Add chicken, broth, salsa, cilantro cubes, corn and taco seasoning to crockpot and cook on HIGH for 4 hours. At the 3:30 mark, take the chicken out and fork shred it. Add the chicken back in and let it cook for another 30min.
Use these homemade gluten free tortillas, add fresh tomatoes, fresh cilantro, a squeeze of lime and this incredible avocado cilantro lime dressing and ENJOY!
