This one isn’t for the kiddos. Well, not yet at least. Both boys like a little spice, the youngest likes a LOT of spice, but this may be a bit too much. However, I ADORE this soup. it’s crazy easy (and fast) to make, and I literally could stuff myself on this until I burst.

 

Prep Time: 5 min

Cook Time: 30 min

 

Spicy Zuppa Toscana

1 lb. Hot Italian Sausage

4 cups chopped kale

6 small red potatoes diced

1 small onion, diced (or frozen pearl onions when you are in a bind)

1 small jar roasted red peppers – chopped small

10 cups chicken broth

2 chicken bouillon cubes

1 cup heavy cream

red pepper flakes to taste (I use about 3-4 tablespoons)

 

 

 

In a large pot, brown the sausage and onion together (~10min). Chop the potatoes in between stirring. Add potatoes and cook on medium heat 5 min.

 

Add chicken broth, bouillon cubes, roasted red pepper and red pepper flakes. Bring to a boil and cook for 10 min.

Add heavy cream and kale. Cook 5 min to soften kale and serve! Just TRY not having a second bowl! I dare you!
