korean beef bowl

This is one of our favorite quick meals! From start to finish it takes around 20 min (including prep) so it’s definitely a winner for busy days! Everyone loves it (it’s a miracle, y’all) and I get the cutest little sous chef to help me make it! Adjust amounts for your own tastes. We always have these ingredients on hand because we love it so much.

Korean Beef Bowl

2 lbs. organic ground beef

4 tbsp. minced garlic

1/4 cup packed brown sugar

4 tbsp. sesame oil

1/4 cup Ginger Juice

1 tbsp. red pepper flakes

2/3 cup gluten free soy sauce

2 large sliced green onions

2 large shredded carrots

2 cups cooked jasmine rice

Start by putting 2 cups jasmine rice and 2.5 cups water into a rice cooker (for real, I don’t even know how to make rice on a stove anymore, I just rely on my handy rice cooker).

Next, brown the 2 lbs. of organic ground beef and garlic mixed together. While that is cooking, mix the oil, soy sauce, ginger juice, brown sugar, and red pepper flakes together and set aside.

Chop onion and shred carrot while the meat is browning. This is a handy task for an adorable sous chef (with proper safety instructions of course).

Once meat is browned, drain if needed, add soy sauce mixture to the meat. Cook on medium high heat to boil down the sauce. Once ready, add carrot shreds and cook for 2 minutes. Add green onions and take off heat. Serve over rice and enjoy!
