I’m thankful to be married to the Breakfast King. Seriously. My husband is in charge of mornings and makes THE BEST breakfasts out there! He’s been so awesome with our family change to gluten/dairy free. He is actually the one that found the flour we use after trying many, many types! The kids were worried about their favorite waffle recipe (original courtesy of my baby sister, Amanda, and her hubby, Matt, who watched the kids one weekend and made it for them), but hubby knocked it out of the park with this tweak!
Gluten + Dairy Free Waffles
2 cups gluten free flour
2 tbsp. baking powder
1 tsp. baking soda
4 tbsp. granulated sugar
3/4 tsp. salt
2 eggs
4 tbsp. avocado oil
2 cups unsweetened almond milk
1 tsp. vanilla
Mix dry ingredients. Whisk in eggs, oil, vanilla and milk in a separate bowl. Slowly combine. Can be used as waffle or pancake mix!
